
Autumn Morning Blueberry-Pecan Baked Oats

This recipe is super versatile which is a box any good breakfast should tick. Whether you’re prepping for a busy week or making a batch to share on a Sunday morning, this bake brings together family, nourishment, and that little bit of everyday magic we all crave. Hair Atelier takes this already delicious recipe and transforms it into a deeply satisfying and nourishing meal to warm you from the inside on chilly Autumn days. This gorgeous recipe was inspired by the talented ‘Love and Lemons’.
What you’ll need:

12 g (2 serves) Hair Atelier

1 ripe banana, mashed (½ cup)

1 cup unsweetened oat milk
-
¼ cup almond or cashew butter
-
¼ cup maple syrup
-
¼ cup coconut oil, melted
-
1 teaspoon vanilla extract
-
1 teaspoon baking powder
-
1 teaspoon cinnamon
-
½ teaspoon salt
-
2 ½ cups rolled oats
-
1 cup coarsely chopped pecans (or walnuts)

1 cup blueberries, fresh or frozen
-
1 tablespoons brown sugar (for the crispy topping)

2 tablespoons coconut flakes (for the crispy topping. Optional but very tasty!)
Instructions:

Preheat the oven to 180°C and grease a 20 cm x 30 cm (or similar) baking dish.

Mix the wet ingredients in a large bowl by combining the mashed banana, almond or oat milk, almond butter, vanilla extract, maple syrup, and coconut oil. Use a whisk to combine evenly.

Add warmth and lift by stirring in the Hair Atelier powder, baking powder, cinnamon, and salt. Whisk or stir until evenly distributed.

Combine the remaining ingredients by folding in the oats, ¾ cup of the pecans, and half a cup of the blueberries. Pour the mixture into the prepared baking dish and smooth into an even layer.

Scatter and sprinkle the top with the remaining blueberries, the last of the pecans, the brown sugar, and coconut flakes.

Bake for 30 to 40 minutes, or until the topping is golden and slightly crisp and the middle is set. Remove from the oven and let rest for 10 minutes before slicing into warm, hearty squares. Serve with a dollop of yoghurt, or a drizzle of maple syrup.
