Hair Atelier Protein Clouds
Ingredients (makes ~ 8-10 clusters)
Strawberry protein cloud
- 1½ cups frozen strawberries
- 1 cup high-protein soy yoghurt
- 2 tsp Apotecari Hair Atelier
- 1-2 tbsp maple syrup
- 1 tbsp almond butter
- 1 tbsp vanilla
- Pinch of salt
Chocolate Shell
- 150g vegan dark chocolate
- 1 tsp coconut oil (for a snappier shell)
- Flaky sea salt (optional)

Method
- Blend the yoghurt base
- Add frozen strawberries, yoghurt, Hair Atelier, maple syrup, nut butter, lemon juice, vanilla, and salt to a high-speed blender or food processor.
- Blend until thick, airy, and mousse-like, it should hold its shape on a spoon.
- Fold in Texture
- Gently stir through hemp seeds or chopped nuts for extra protein + bite.
- Freeze in Clusters (not moulds)
- Spoon generous dollops onto a lined tray.
- Peaks and swirls are what make them look good.
- Freeze for 1–2 hours until solid.
Chocolate Dip or Drizzle
- Melt chocolate with coconut oil.
- Dip the clusters into the chocolate or drizzle generously over the tops
- Sprinkle with flaky salt if using.
- Freeze again for 15–20 minutes until the shell is set.
