Ingredients

1 cup (140g) raw cashews (soak for around an hour to make blending easier)
1 cup (100g) desiccated or shredded coconut
1 cup (120g) raspberries (fresh or frozen, thawed)
3 Tbsp cacao powder
12g Hair Atelier powder (4 heaped teaspoons)
6 medjool dates (pitted)
1–2 Tbsp coconut oil (optional, helps to bind the mixture)
1 Tbsp toasted sunflower seeds
1 Tbsp chia seeds (or ground flax/hemp seeds)
Pinch salt

Method

1. In a food processor, pulse cashews and coconut until fine and crumbly.
   

2. Add cacao, protein powder, sunflower seeds, chia seeds, and salt. Pulse to combine.
   

3. Add dates and raspberries and half the coconut oil. Blend until the mixture clumps. If it’s too wet, add more coconut; if too dry, add 1 tsp coconut oil at a time.
   

4. Press into a lined slice tin for squares. Or roll into balls if desired.
   

5. Refrigerate 1–2 hrs (or freeze 30 mins) until set.
   

6. Top slice with your choice of shredded coconut, a dusting of cacao powder, or some melted dark chocolate and dried raspberries.
