Ingredients

- 1 cup cooked quinoa (cooled)
- 2/3 cup oat flour (we simply wizzed oats in a nutribullet to achieve a milled, flour texture)
- 2 teaspoons (6 g) Hair Atelier
- 2 tablespoons peanut butter
- 3 tablespoons coconut sugar
- 2 tablespoons maple syrup
- 1 teaspoon vanilla extract (optional)
- ¼ cup frozen berries such as raspberries (optional)
Method
1. Add all ingredients to a food processor and blend until you have a smooth, even paste.
2. Form into small balls and place on a lined baking tray. (Tip: if rolling lots of tiny balls feels less ‘meditative’ and more ‘monotonous’, roll into long thin “snakes” and slice into bite-sized pieces instead.)
3. Bake in the oven at 180°C for 8–10 minutes, or until crisp and crunchy. Keep checking as their small size means they cook quickly!
4. Cool completely, then store in an airtight container.
5. Pour over oat or soy milk for a nourishing breakfast cereal, or enjoy as a crunchy snack throughout the day.
